Butter for Macarons

Butter is a 100% natural product, it is made up of water droplets suspended in butterfat. It is high in Vitamin A and carotene. It is made by churning the cream derived from milk. Twenty litres (700 fl oz) of milk are required to make 1 kg (2 lb) of butter. The most common form of butter is made from pasteurised cow's milk.

Macarons with butter

Raw or farm butter is made exclusively from raw unpasteurised cream. Its nutritional qualities are preserved and it has stronger taste.

Butter is easily digested when fresh and still in its emulsified form than when it is heated or cooled. In baking, it enhances flavours and adds richness and creaminess.
